
Cooking at 10 K elevation poses some challenges. Betty has had to experiment a bit.

Less baking soda. More flour. An extra egg, and so on and so forth.

But where there is a will there is a way. We had spaghetti the other day and she had to boil the noodles un till they would have been soup at a lower altitude.

This fine meal of cornbread, turnips, squash, purple hull peas and pork chops, sure helps to keep mountain folks a' goin' !
